Chef Chacon

Chef Jorge Chacon

Chef Jorge Chacón is the owner of Piccolo Gelatoteca, a training workshop specializing in ice cream education with over 500 students across Mexico, the USA, and Latin America. He is a two-time award winner in the Mexican Artisan Gelato Championships (2018 runner-up, 2024 third place) and has led training sessions at the International Ice Cream Fair (2022, 2023, 2025). Chef Chacón has also served as a judge at the World Popsicle Championships in Mexico City (2020), Guadalajara (2022), and Las Vegas (2023).

Technical Parts and Parameters

Learn the technical aspects of making popsicles, focusing on consistency, texture, flavor balance, freezing times, and storage for optimal quality.

Base Formulation

Participants will learn a simple method to formulate, the percentages of ingredients, and how to modify the formula without losing its essence. Math will be used to convert formulas to metric units.

Filling Formulation

Chef Chacon will teach you how to create fillings with the perfect consistency, flavor combinations, and texture to elevate your frozen treats. Learn techniques to ensure even distribution and compatibility with your popsicle base.

Fruit Formulation

Learn how to balance natural sweetness, acidity, and texture to highlight the best qualities of fresh fruits. Chef Checon will guide you through techniques for achieving smooth consistency.

Vegan Formulation

Explore the world of vegan popsicle formulation with Chef Chacon. Learn how to craft dairy-free and plant-based popsicles with perfect texture and flavor.
