About the Instructor

Chef Jorge Chacon
Chef Jorge Chacón is the owner of Piccolo Gelatoteca, a training workshop specializing in ice cream education with over 500 students across Mexico, the USA, and Latin America. He is a two-time award winner in the Mexican Artisan Gelato Championships (2018 runner-up, 2024 third place) and has led training sessions at the International Ice Cream Fair (2022, 2023, 2025). Chef Chacón has also served as a judge at the World Popsicle Championships in Mexico City (2020), Guadalajara (2022), and Las Vegas (2023).

Key Ingredients and Their Functions
Learn about key ingredients and what roles they can have in our formulation. Instructors will also teach techniques to improve the appearance of popsicles and cover product maturation and optimal serving temperatures.

Two-In-One: Paletas & Helados
The masterclass will focus on production of sugar-free and alcohol paleta production. The class will also cover helado production. Understand and beat the common frustrations that shops have when adding these production options to their menu.

Formulation
Participants will learn a simple method to formulate, the percentages of ingredients, and how to modify the formula without losing its essence. Math will be used to convert formulas to metric units.

Paleta & Helado Equipment
Hosts will present paleta and helado machines alongside with popsicle/paleta molds to demonstrate how the equipment is an ideal solution for frozen dessert businesses.

Practice
During the masterclass, attendees will practice crafting paletas & healdos using a range of provided ingredients and the demonstrated formulation techniques.
